Cherry Stuffed French Toast

Make the cherry compote: Combine cherries, sugar, and lemon juice in a saucepan. Bring to a simmer over medium heat and cook 10-12 minutes until cherries soften and sauce thickens. Remove from heat, add almond extract. Keep warm.
Make the filling: Beat softened cream cheese with powdered sugar until smooth. Fold in chopped drained cherries and almond extract. Set aside.
Prepare the bread: Cut a pocket horizontally into each thick bread slice, being careful not to cut all the way through. This creates a pocket for the filling.
Stuff the bread: Spread 2-3 tablespoons of the cherry cream cheese filling into each pocket. Press bread gently to close.
Make the custard: Whisk together eggs, milk, vanilla, and cinnamon in a shallow dish until well combined.
Soak the stuffed bread: Carefully dip each stuffed bread slice into the custard, about 20 seconds per side. Don't oversoak or the filling may seep out.
Cook the French toast: Melt butter on a griddle over medium heat. Cook stuffed French toast 3-4 minutes per side until golden brown and heated through.
Assemble and serve: Place French toast on plates. Spoon warm cherry compote generously over the top. Add a dollop of whipped cream and dust with powdered sugar. Serve immediately.
