Pork Roll, Egg and Cheese
The undisputed breakfast champion of New Jersey. Crispy-edged Taylor Ham (or pork roll, depending on which part of the state you're from), a perfectly fried egg, and melted American cheese on a fresh kaiser roll. It's a Jersey thing - you wouldn't understand.
Equipment Needed
Instructions
Prep the pork roll: Cut 4 small slits around the edge of each pork roll slice, about 1 inch apart, cutting from the edge toward the center. This prevents the slices from cupping up when they cook.
Heat your griddle: Heat a flat griddle or large skillet over medium-high heat. A well-seasoned flat top is ideal for achieving that authentic Jersey deli taste.
Cook the pork roll: Place the pork roll slices on the hot griddle. Cook for about 2 minutes per side until the edges are crispy and caramelized, and the meat has browned nicely. The slits should splay open as it cooks.
Fry the eggs: Add butter to the griddle. Crack the eggs onto the griddle and season with salt and pepper. Cook until the whites are set but the yolk is still runny (or to your preference).
Add cheese to pork roll: While eggs finish cooking, stack the pork roll slices and lay American cheese on top. The residual heat will start melting the cheese.
Prep the roll: Slice the hard roll in half. For extra authenticity, lightly butter and toast the cut sides on the griddle until golden.
Assemble the sandwich: Place the cheese-topped pork roll stack on the bottom half of the roll. Top with the fried eggs. Add the top of the roll.
Press and serve: Give the sandwich a gentle press to let everything settle together. Wrap in deli paper if you want the full experience. Serve immediately with ketchup on the side if desired.
💡 Pro Tips & Variations
- The Taylor Ham vs. Pork Roll debate: North Jersey calls it Taylor Ham (after the brand), South Jersey calls it pork roll. Both are correct, and arguing about it is a beloved Jersey pastime.
- Authentic pork roll: Look for Taylor, Case's, or Trenton brand pork roll. It's available in most Northeast supermarkets or can be ordered online.
- The roll matters: A fresh, crusty-outside, soft-inside hard roll or kaiser roll is essential. Nothing pre-sliced or too soft.
- SPK: "Salt, pepper, ketchup" is the traditional Jersey diner order. Just say "SPK" and they'll know.
- Egg preparation: Over-easy is traditional so the yolk runs when you bite in, but fried hard or scrambled are also acceptable.
- Make it "the works": Add hash browns or home fries inside the sandwich for extra Jersey Shore boardwalk vibes.
