Equipment Needed
Instructions
Prep the roast beef: If using deli roast beef, separate the slices and let them come to room temperature. For authentic North Shore style, the beef should be paper-thin and slightly warm when served.
Form the patties: Divide the ground beef into 4 equal portions (about 6 oz each). Gently form into patties about 3/4 inch thick, slightly wider than your buns. Press a small dimple in the center of each patty to prevent puffing.
Season generously: Season both sides of each patty with salt, pepper, and a splash of Worcestershire sauce. Let rest at room temperature for 10 minutes before cooking.
Heat the cooking surface: Preheat a cast iron skillet or griddle over medium-high heat until very hot, about 3-4 minutes. You want to hear an aggressive sizzle when the patty hits the surface.
Cook the patties: Place patties on the hot surface and cook without moving for 3-4 minutes until a dark crust forms. Flip once and cook another 3-4 minutes for medium doneness. Add cheese in the last minute of cooking and cover briefly to melt.
Warm the roast beef: While the patties cook, warm the sliced roast beef in the BBQ sauce in a small pan over low heat. Stir gently to coat without shredding the meat.
Toast the buns: Butter the cut sides of the buns and toast them on the griddle until golden brown, about 1-2 minutes. Keep warm.
Assemble the 3-Way: Spread mayo on the bottom bun. Add the cheese-topped patty, pile on the BBQ-sauced roast beef, and drizzle any extra sauce from the pan. Add pickles if desired. Top with the bun.
Serve immediately: These burgers are best hot and messy. Serve with plenty of napkins and classic sides like onion rings or crinkle-cut fries. A cold local brew doesn't hurt either.
💡 Pro Tips & Variations
- Source quality roast beef: For true North Shore authenticity, look for rare roast beef sliced paper-thin at your deli counter. Kelly's Roast Beef is the gold standard if you're local.
- Make your own BBQ sauce: Mix ketchup with a little molasses, apple cider vinegar, and a touch of smoke for homemade North Shore-style sauce.
- Cheese options: American is traditional, but provolone or cheddar work great too. Some places use a cheese sauce for extra decadence.
- Go Super Beef style: Skip the burger patty entirely and just pile roast beef on a roll for a classic North Shore roast beef sandwich.
- Add James River BBQ sauce: This is the specific sauce many North Shore shops use - sweet with a subtle tang.
- Onion ring upgrade: Tuck a few crispy onion rings inside the burger for extra crunch and authenticity.
