Tip: Freeze the pepperoni for 10 minutes before dicing - it'll be much easier to cut into small pieces.

Form the patties: Divide the mixture into 4 equal portions. Form into patties about 3/4-inch thick, slightly larger than your rolls. Make a small indent in the center of each.

Warm the marinara: Heat marinara sauce in a small saucepan over low heat. Keep warm while you cook the burgers.

Cook the patties: Heat a cast iron skillet over medium-high heat. Cook patties for 4-5 minutes per side for medium. The cheese inside will melt and the pepperoni will render slightly.

Crisp the topping pepperoni: While patties rest, add the whole pepperoni slices to the hot skillet. Cook 30 seconds per side until edges curl and they're slightly crispy.

Tip: The pepperoni will release delicious oil - save it to brush on the buns!
