Ingredients

For the Base:

2 cups heavy cream
1 cup whole milk
3/4 cup sugar
1/2 cup cocoa powder
4 oz dark chocolate, chopped
5 large egg yolks
1 teaspoon vanilla extract
1/4 teaspoon salt

For Mix-ins:

1 cup crushed Oreo cookies
1/2 cup hot fudge sauce
1/2 cup toasted pecans, chopped
1/2 cup marshmallow fluff

Instructions

1
Toast pecans in a dry skillet over medium heat until fragrant, about 4 minutes. Cool and chop roughly.
2
In a heavy saucepan, combine cream, milk, half the sugar, and cocoa powder. Heat while whisking until cocoa dissolves and mixture steams.
3
Remove from heat and add chopped chocolate. Let sit 2 minutes, then stir until smooth.
4
Whisk egg yolks with remaining sugar and salt until pale. Slowly temper with the hot chocolate mixture.
5
Return to saucepan and cook over medium-low heat, stirring constantly, until custard reaches 170-175 degrees F.
6
Strain custard, stir in vanilla. Cover and refrigerate for at least 4 hours.
7
Churn chilled custard in ice cream maker, about 25-30 minutes. Add crushed Oreos and pecans in last 5 minutes.
8
Warm hot fudge sauce until pourable. Microwave marshmallow fluff for 10 seconds to soften.
9
Transfer ice cream to container in layers, drizzling fudge and swirling marshmallow between each layer.
10
Freeze 4 hours. Let sit 5-10 minutes before serving. Top with extra fudge and marshmallow.

Tips for Perfect Mud Pie Ice Cream

River Inspiration

Mississippi Mud Pie is named after the dark, rich mud along the banks of the Mississippi River.

Double Chocolate

Using both cocoa powder and melted chocolate creates the deepest, richest chocolate flavor.

Cookie Texture

Crush Oreos coarsely for varied texture - some big pieces, some crumbs throughout.

Marshmallow Swirl

Work quickly with the marshmallow - it firms up fast. Keep it in distinct ribbons, not fully mixed.

Southern Pecans

Use Mississippi-grown pecans if possible for the most authentic Southern flavor.

Serving Idea

Serve in a chocolate cookie crust with whipped cream for the full Mud Pie experience!
