Cuban Pizza
All the flavors of Miami's famous Cuban sandwich transformed into pizza form. Citrus-garlic mojo pork, sweet ham, tangy pickles, melted Swiss cheese, and yellow mustard on a crispy crust. Pure Florida flavor.

Make the mojo marinade: Whisk together orange juice, lime juice, minced garlic, cumin, oregano, and salt. Place pork tenderloin in marinade, cover, and refrigerate at least 2 hours or overnight.
Make the dough: Dissolve yeast and sugar in warm water. Let stand 5-10 minutes. Combine flour and salt, add yeast mixture and olive oil. Knead 8-10 minutes until smooth. Cover and let rise 1 hour.
Cook the mojo pork: Remove pork from marinade. Roast at 400°F for 25-30 minutes until internal temperature reaches 145°F. Let rest 10 minutes, then slice thinly.
Preheat oven: Place pizza stone on the lowest rack and preheat to 500°F (260°C) for at least 30 minutes.
Shape the pizza: Punch down dough and stretch or roll into a 14-inch round. Transfer to a cornmeal-dusted pizza peel.
Assemble: Spread a thin layer of yellow mustard over the dough. Layer Swiss and mozzarella cheese, then arrange sliced mojo pork and ham over the cheese.
Bake: Slide pizza onto the hot stone and bake 10-12 minutes until crust is golden and cheese is melted and bubbly.
Add pickles: Remove from oven and immediately arrange pickle slices over the hot pizza. The residual heat will slightly warm them while keeping their crunch.
Serve: Drizzle with additional mustard if desired. Let rest 2 minutes, then slice and serve immediately while the cheese is still stretchy.

- The pickle debate: Some say bake them, some say add after. Adding after keeps the crunch - very important for Cuban sandwich authenticity.
- Use Genoa salami: Tampa-style Cubans include Genoa salami. Add it for a Tampa twist.
- Sour orange: Traditional mojo uses sour orange (naranja agria). Find it in Latin markets, or use equal parts OJ and lime.
- Press it: For extra Cuban sandwich authenticity, press the pizza with another hot pan after baking to slightly flatten.
- Leftover pork: This is a great use for leftover Cuban-style roast pork from another meal.
