Cook the sausage: Remove Italian sausage from casings and cook in a skillet over medium heat, breaking into crumbles, until browned through. Drain and set aside.
Prep the vegetables: Slice all peppers, onions, mushrooms, and olives. Keep them separate for easy assembly.
Preheat oven: Place pizza stone in oven and preheat to 500F (260C) for at least 30 minutes. The hot stone is crucial for a crispy crust.
Shape the dough: Punch down dough and roll into a large 16-inch round (Vegas style means going big!). Transfer to a well-floured pizza peel.
Layer the base: Spread sauce evenly over dough. Add 2 cups of mozzarella, distributing evenly.
Add the meats: Distribute pepperoni slices and cooked sausage crumbles across the pizza.
Load up the veggies: Add mushrooms, peppers, onions, olives, and banana peppers. Top with remaining mozzarella and sprinkle with Italian seasoning.
