Texas BBQ Pizza
Everything's bigger in Texas - including this pizza! Slow-smoked brisket with its signature smoke ring, spicy jalapenos, and sweet onions. This is Central Texas BBQ tradition in pizza form!

Make the dough: Dissolve yeast in warm water, let stand 5 minutes. Add flour, salt, and oil. Knead until smooth, about 8 minutes. Cover and let rise 1 hour.
Prep the brisket: If using cold leftover brisket, slice against the grain into 1/4-inch slices, or chop into bite-sized pieces. Warm slightly and toss with a little BBQ sauce to keep it moist.
Preheat oven: Place pizza stone in oven and preheat to 475F (245C) for at least 30 minutes.
Shape the dough: Punch down risen dough and stretch into a 14-inch round. Transfer to floured pizza peel.
Assemble: Spread BBQ sauce over dough as your base. Add minced garlic, then layer mozzarella and smoked gouda. Top with brisket slices, jalapenos, and red onion.
Bake: Slide pizza onto hot stone and bake 12-14 minutes until crust is golden and cheese is bubbling with brown spots.
Finish and serve: Remove from oven, drizzle with extra BBQ sauce, and top with fresh cilantro and pickled onions if using. Let rest 2 minutes before slicing. Serve with extra sauce on the side!
