Pork Roll Mac and Cheese
Whether you call it Taylor Ham or Pork Roll (that debate could start a war!), this New Jersey mac and cheese celebrates the Garden State's favorite breakfast meat. Crispy pork roll, melty American cheese, and an egg on top.

- Cook macaroni until al dente. Drain and set aside.
- Cut slits in pork roll edges to prevent curling. Fry until crispy on both sides. Chop half, leave half as slices.
- Melt butter in a large saucepan. Whisk in flour and cook 2 minutes.
- Gradually add milk, whisking until thickened.
- Remove from heat. Stir in American cheese and cheddar until smooth. Season with pepper.
- Fold in pasta and chopped pork roll.
- Fry eggs to your preference (runny yolks are traditional for Jersey breakfast sandwiches).
- Serve mac topped with pork roll slices, a fried egg, and SPK (salt, pepper, ketchup) on the side.

- Taylor Ham vs Pork Roll: North Jersey says Taylor Ham, Central/South Jersey says Pork Roll. Both are correct!
- Cut 4 slits in the pork roll edges to prevent it from doming up when frying.
